CHICKEN LIVER RICE

Ingredients

  • 3 Tbsp Rice Bran Oil
  • 1 Tsp Fennel Seeds
  • 1 Medium Onion (Diced)
  • 1 Small Ginger (Chopped)
  • 2 Cloves of Garlic (Minced)
  • 200g Chicken Liver
  • 1 Tsp of Ground Black Pepper
  • 1 Tsp of Salt
  • 6 Scotch Bonnet Peppers (Chopped)
  • 1 Tsp of Smoked Paprika
  • 6 Fresh Basil leaves
  • 2 Cups of Rice
  • 500ml Water

Directions

  1. Heat rice bran oil in a pan over medium heat.
  2. Add fennel seeds, onion, ginger, garlic, and stir until translucent.
  3. Add the chicken liver, black pepper, salt, and stir–fry for 5 minutes. Add smoked paprika, fresh basil and stir.
  4. Add the rice, braise for 3 minutes, then add water, adjust salt to your taste and cover and allow it to cook for 25 minutes.
  5. Chicken liver rice ready to serve. Garnish with slice of lemon.
