CHICKEN FEET PEPPER SOUP

Ingredients

  • 600g chicken feet
  • 1 tsp ground grains of paradise
  • 1 tsp African orchid nutmeg, ground
  • 1 tsp ground black pepper
  • 1 ½ tsp salt
  • A handful of fresh basil, chopped
  • 1 medium onion, puree
  • 10 scotch bonnet pepper, blended
  • 7 African orchid nutmeg
  • 15 grains of selim
  • 1 tsp grains of paradise
  • 1 tsp anise seeds
  • 1 tsbp salt
  • 400ml water

Directions

  1. Pour the chicken feet into a saucepan over medium heat, add the grains of paradise, African orchid nutmeg, black pepper, salt, basil, onion puree, blended scotch bonnet pepper, stir and let simmer for 5-7 minutes
  2. Pour the African orchid nutmeg into a dry blender, add grains of selim, grains of paradise, anise seeds and blend into a smooth mixture then pour onto the chicken feet
  3. Add salt , water, stir and let simmer for 10-15 minutes
  4. Chicken feet pepper soup ready to serve
