BULGUR WHEAT JOLLOF

Ingredients

  • 4 Tbsp of Vegetable Oil
  • ½ Pound of Beef Fillet (Diced)
  • 1 Tsp of Dried Oregano
  • 1 Tsp of Ground Black Pepper
  • 1 Small Ginger (Grated)
  • 3 Cloves of Garlic (Minced)
  • 1 Tbsp of Soy Sauce
  • 1 Tsp of Salt
  • 1 Medium Onion (Diced)
  • 4 Medium Tomatoes (Diced)
  • 1 Tbsp of Tomato Paste
  • 1 Tbsp of Cayenne Pepper
  • 1 Tsp of Smoked Paprika
  • 1 Tsp of Curry Powder
  • 2 Cups of Bulgur Wheat
  • 500ml Water

Directions

  1. Heat vegetable oil in a pan over medium heat.
  2. Add the beef, oregano, black pepper, ginger, garlic, soy sauce, salt, and stir-fry for 5 minutes.
  3. Add the diced onion, stir until translucent, then add the chopped tomatoes, tomato paste, stir and let simmer for 5 minutes.
  4. Add the cayenne pepper, smoked paprika, curry powder, stir and let simmer for 2 minutes.
  5. Add the bulgur wheat, braise for 5 minutes, then add salt, water, stir and let cook for 35-40 minutes.
  6. Bulgur wheat jollof ready to serve.
