BINDURI GRILLED CHICKEN

Ingredients

  • 1 cup dried red chilli
  • 4 cloves of garlic
  • 1 tsp ground coriander
  • 1 tsp ginger powder
  • 1 tsp soy sauce
  • 1 tsp salt
  • 1 tsp liquid smoke
  • ΒΌ cup vegetable oil
  • 2 medium chicken thighs
  • 1 ltr water

Directions

  1. Soak the dried chilli in hot water for 5 minutes, drain the water out and pour the soaked chili into a blender
  2. Add garlic, ground coriander, ginger powder, soy sauce, salt, liquid smoke, vegetable oil and blend into a smooth mixture and set aside
  3. Score the chicken thighs, pour the chilli paste on and gently rub on to cover every part of it
  4. Cover with aluminium foil and oven grill at 180c for 15 minutes then take of the foil and grill for 10 minutes
  5. Binduri grilled chicken ready to serve
